1 cup of quinoa
1 handful of snow peas (halved and blanched)
1 salmon steak
¼ cup cherry tomato (halved)
½ red onion (finely sliced)
¼ cup chopped coriander
½ small cucumber (sliced)
Dressing
3tbs tamari
1tsp crushed ginger
1 lime, grapefruit or orange
Place quinoa in 2 ½ cups of boiling water. Simmer for 20 min or until water has evaporated. Bake or BBQ salmon. Crumble the salmon into the quinoa and add all other ingredients. Pour dressing on salad and serve.
